The Chateau Farm

The Château Farm is the heart of our farm-to-table restaurant and provides produce for The Little Castle and guests who stay at Château de la Coutere. Set in the valley and bordered by the River Save, The Château Farm wraps around the château and provides much of the food served from our kitchen.

This close connection between farm and restaurant allows us to cook with the seasons, reduce food miles, and serve food that is fresh, traceable, and thoughtfully produced.

A Working Regenerative Farm

Our Farm is a mixed species, regenerative farm, managed with a focus on soil health, animal welfare, and long-term sustainability. We work with natural systems rather than against them, aiming to improve the land year after year. Our farm is home to a range of animals, including: Jersey cows, Tarrasconnaise sheep, heritage breed chickens, Muscovy ducks and farm rabbits. Each animal plays a role in the wider farm system, contributing to healthy soil and balanced land management.

Vegetables Grown on Site

Vegetable growing is central to what we do. Much of the produce used in the restaurant is grown on the farm using sustainable methods.

Our growing spaces include: Five polytunnels producing salads and summer crops, a productive potager supplying everyday kitchen staples, field beds for seasonal vegetables throughout the year, a small crop area for animal feed and hay, our old orchard (currently undergoing restoration), and a dedicated herb garden for fresh culinary herbs supplying both the kitchen and bar. In essence, what’s ready to harvest shapes the menu — not the other way around.

From Field to Kitchen

Having the farm just outside the kitchen door means we can harvest at the right moment and use ingredients at their best. Our menus change with availability, reflecting what’s growing well in the fields and gardens at any given time.

The result is food that is simple, seasonal, and honest — cooked with care and without unnecessary complexity.

Farming and cooking side by side allows us to:

  • Keep ingredients fresh and local
  • Minimise waste and transport
  • Stay connected to the land and the food we serve

It’s a practical approach, grounded in everyday farming and good cooking — and it’s at the core of what we do at Château de la Coutere.

Entièrement rénovée, cette salle constitue la partie la plus ancienne du bâtiment et présente le mur en pierre d’origine qui se dressait ici bien avant la construction du château lui-même, il y a des centaines d’années.
